A traditional Southern morning dish, Biscuits and Gravy consists of fluffy biscuits covered in sausage gravy.

    Ingredients:

    For the biscuits:

    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 1/2 cup cold unsalted butter, cut into small cubes
    • 3/4 cup milk

    For the gravy:

    • 1/2 pound breakfast sausage (pork or turkey)
    • 2 tablespoons all-purpose flour
    • 2 cups whole milk
    • Salt and pepper to taste

    Instructions:

    Preheat the oven:

    Preheat your oven to 425°F (220°C).

    Make the biscuits:

    In a large mixing bowl, whisk together the flour, baking powder, and salt. Add the cold butter cubes to the dry ingredients and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs. Pour in the milk and stir until just combined. Be careful not to overmix.

    Shape the biscuits:

    Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick round. Use a biscuit cutter or the rim of a glass to cut out biscuits. Place the biscuits onto a baking sheet lined with parchment paper, making sure they’re close together but not touching.

    Bake the biscuits:

    Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown on top.

    Cook the sausage:

    While the biscuits are baking, cook the breakfast sausage in a skillet over medium heat, breaking it up into small pieces with a spatula. Cook until browned and cooked through, about 8-10 minutes.

    Make the gravy:

    Sprinkle the cooked sausage with flour and stir well to coat. Cook for 1-2 minutes to cook off the raw flour taste. Slowly pour in the milk while stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook, stirring frequently, until the gravy has thickened to your desired consistency, about 5-7 minutes. Season with salt and pepper to taste.

    Serve:

    Split the warm biscuits in half and place them on plates. Spoon the hot sausage gravy over the biscuits and serve immediately.
