    For the Pie Crust:

    • 2 1/2 cups all-purpose flour
    • 1 cup unsalted butter, cold and cubed
    • 1 teaspoon salt
    • 1 teaspoon granulated sugar
    • 1/4 to 1/2 cup ice water

    For the Apple Filling:

    • 3 large apples, peeled, cored, and diced (e.g., Granny Smith)
    • 1/2 cup granulated sugar
    • 1/4 cup brown sugar
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 2 tablespoons all-purpose flour
    • 1 tablespoon lemon juice

    For Assembly:

    • 1 egg (for egg wash)
    • 1 tablespoon water (for egg wash)
    • Granulated sugar (for sprinkling)

Step 1: Prepare the Pie Crust

In a food processor, combine the flour, salt, and sugar.

Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.

Gradually add the ice water, one tablespoon at a time, and pulse until the dough just comes together.

Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.

Step 2: Make the Apple Filling

In a large bowl, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice.

Toss the mixture until the apples are evenly coated. Set aside.

    Step 3: Preheat the Oven

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 4: Roll Out the Dough

On a lightly floured surface, roll out one disc of pie dough to about 1/8-inch thickness.

Using a round cutter or a bowl, cut out circles from the dough. Repeat with the second disc.

Step 5: Assemble the Hand Pies

Place a spoonful of the apple filling onto one half of each dough circle, leaving a border around the edges.

Fold the dough over the filling, creating a half-moon shape.

Press the edges together to seal, and crimp with a fork to create a decorative edge.

Place the assembled hand pies on the prepared baking sheet.

Step 6: Egg Wash and Bake

In a small bowl, whisk together the egg and water to create an egg wash.

Brush the tops of the hand pies with the egg wash.

Sprinkle granulated sugar over the egg wash.

    Step 7: Bake

Bake in the preheated oven for 20-25 minutes or until the hand pies are golden brown.

    Step 8: Cool and Serve

Allow the hand pies to cool on the baking sheet for a few minutes.

Transfer them to a wire rack to cool completely.

These Apple Hand Pies are delicious served warm or at room temperature.

Enjoy them as a sweet snack, dessert, or pack them for a picnic.

They’re a convenient and tasty way to savor the flavors of apple pie in a portable form.
