Apricot Almond Biscotti Recipe


    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 3 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup dried apricots, chopped
    • 1 cup almonds, toasted and chopped

    For the glaze:

    • 1 cup powdered sugar
    • 2 tablespoons apricot preserves
    • 1-2 tablespoons milk


    Preheat the oven:

    Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

    Mix dry ingredients:

    In a large bowl, whisk together the flour, sugar, baking powder, and salt.

    Prepare wet ingredients:

    In a separate bowl, beat the eggs and vanilla extract until well combined.

    Combine wet and dry ingredients:

    Add the wet ingredients to the dry ingredients, stirring until a soft dough forms.

    Add apricots and almonds:

    Fold in the chopped dried apricots and toasted almonds until evenly distributed in the dough.

    Shape the dough:

    Divide the dough in half. On the prepared baking sheet, shape each half into a log about 12 inches long and 2 inches wide, leaving space between them.

    Bake the logs:

    Bake in the preheated oven for 25-30 minutes or until the logs are lightly golden and firm to the touch.


    Allow the logs to cool on the baking sheet for 10 minutes. Reduce the oven temperature to 325°F (160°C).

    Slice the biscotti:

    Using a serrated knife, slice the logs diagonally into 1/2-inch slices. Place the slices back on the baking sheet, cut side down.

    Bake again:

    Bake the sliced biscotti for an additional 15-20 minutes, or until they are golden and crisp. Turn them over halfway through to ensure even baking.

    Prepare the glaze:

    In a small bowl, mix together powdered sugar, apricot preserves, and enough milk to achieve a drizzling consistency.

    Drizzle with glaze:

    Once the biscotti have cooled, drizzle them with the apricot glaze.
