    For the Broth:

    • 8 cups vegetable broth
    • 1 onion, peeled and halved
    • 4 cloves garlic, smashed
    • 1 inch piece of ginger, sliced
    • 2 cinnamon sticks
    • 3 star anise
    • 4 whole cloves
    • 1 tablespoon coriander seeds
    • 1 tablespoon soy sauce
    • 1 tablespoon maple syrup or brown sugar
    • Salt, to taste

    For the Pho:

    • 8 oz rice noodles (banh pho), soaked in hot water according to package instructions
    • 1 cup sliced mushrooms (shiitake, cremini, or your choice)
    • 1 cup thinly sliced carrots
    • 1 cup bean sprouts
    • 1 cup chopped bok choy or baby spinach
    • 1/2 cup thinly sliced green onions
    • Fresh cilantro, Thai basil, and mint leaves for garnish
    • Lime wedges for serving
    • Sriracha sauce and hoisin sauce for serving (optional)

    Prepare the Broth:

In a large pot, combine the vegetable broth, onion, garlic, ginger, cinnamon sticks, star anise, cloves, coriander seeds, soy sauce, and maple syrup or brown sugar.

Bring the broth to a boil, then reduce the heat to low and let it simmer for about 30 minutes to allow the flavors to meld together.

After simmering, strain the broth through a fine-mesh sieve or cheesecloth to remove the solids. Return the strained broth to the pot and season with salt to taste.

    Prepare the Pho Ingredients:

While the broth is simmering, prepare the rice noodles according to the package instructions.

    Drain and set aside.

Prep the vegetables by slicing the mushrooms, carrots, and green onions, and chopping the bok choy or baby spinach.

Arrange them on a platter for easy assembly.

    Assemble the Pho:

Divide the cooked rice noodles among serving bowls.

Top the noodles with the sliced mushrooms, carrots, bean sprouts, chopped bok choy or baby spinach, and green onions.

Ladle the hot broth over the noodles and vegetables, ensuring that each bowl is generously filled with flavorful broth.

    Garnish and Serve:

Garnish each bowl of pho with fresh cilantro, Thai basil, and mint leaves for an aromatic touch.

Serve the vegetarian pho hot, accompanied by lime wedges, sriracha sauce, and hoisin sauce on the side for added flavor and customization.

For extra protein, you can add tofu cubes or vegetarian meat substitutes to the pho.

Feel free to customize the vegetables based on your preferences or what you have on hand. Sliced bell peppers, broccoli florets, or snow peas would also be delicious additions.

To save time, you can prepare the broth in advance and store it in the refrigerator for up to 3 days, or freeze it for longer storage. Simply reheat the broth before assembling the pho.

Don’t forget to serve the vegetarian pho with a side of traditional accompaniments like sriracha sauce, hoisin sauce, and lime wedges for a burst of flavor.

Warm up your taste buds and nourish your body with a bowl of aromatic vegetarian pho. Whether you’re craving a comforting meal on a chilly day or looking to impress guests with a flavorful dish, this vegetarian pho recipe is sure to hit the spot.
