Arroz Con Leche (Mexican Rice Pudding) Recipe

    Ingredients:

    • 1 cup long-grain white rice
    • 4 cups whole milk
    • 1 cinnamon stick
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 1/2 cup raisins (optional)
    • Ground cinnamon for garnish

    Instructions:

    Rinse the Rice:

    Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.

    Cook the Rice:

    In a medium-sized saucepan, combine the rinsed rice, 2 cups of milk, and the cinnamon stick. Bring to a gentle boil over medium heat.

    Simmer:

    Once it starts boiling, reduce the heat to low and simmer uncovered. Stir occasionally to prevent the rice from sticking to the bottom of the pan. Continue cooking until the rice is tender and has absorbed most of the milk, which takes about 15-20 minutes.

    Add Sugar:

    Add the sugar to the rice and milk mixture. Stir well until the sugar is completely dissolved. This step adds sweetness to the pudding.

    Incorporate Remaining Milk:

    Pour in the remaining 2 cups of milk gradually, stirring constantly. Continue to simmer over low heat until the mixture thickens to a creamy consistency. This may take an additional 15-20 minutes.

    Add Vanilla and Raisins:

    Stir in the vanilla extract and add raisins if desired. The vanilla enhances the flavor, and the raisins add a chewy texture. Continue to cook for an extra 5-10 minutes.

    Remove Cinnamon Stick:

    Once the rice pudding reaches the desired consistency, remove the cinnamon stick and discard it.

    Serve:

    Spoon the Arroz Con Leche into individual serving bowls. You can serve it warm or chill it in the refrigerator before serving.

    Garnish:

    Sprinkle ground cinnamon on top as a garnish. This adds a lovely aroma and an extra layer of flavor.
