Asparagus Salad Recipe

    • 1 bunch of asparagus, woody ends trimmed
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • 4 cups mixed salad greens (such as baby spinach, arugula, or mesclun)
    • 1/4 cup cherry tomatoes, halved
    • 1/4 cup crumbled feta cheese
    • 2 tablespoons toasted pine nuts (optional)
    • 1 lemon, zest and juice
    • 1 tablespoon Dijon mustard
    • 2 tablespoons extra virgin olive oil


    Preheat your grill or grill pan over medium-high heat.

    In a large bowl, toss the trimmed asparagus with 2 tablespoons of olive oil, and season with salt and pepper.

    Place the asparagus on the preheated grill and cook for 4-5 minutes, turning occasionally, until lightly charred and tender. Remove from the grill and set aside.

    In the same bowl, add the mixed salad greens, halved cherry tomatoes, crumbled feta cheese, and toasted pine nuts (if using).

    In a small bowl, whisk together the lemon zest, lemon juice, Dijon mustard, and extra virgin olive oil until well combined. Season with salt and pepper to taste.

    Drizzle the lemon-Dijon dressing over the salad ingredients in the large bowl and toss gently to coat.

    Arrange the grilled asparagus on top of the salad.

    Serve immediately as a light and flavorful side dish or add grilled chicken or shrimp to make it a complete meal.
