Baked Chicken Fajita Bowls Recipe

    Ingredients:

    • 1.5 pounds boneless, skinless chicken breasts, sliced into thin strips
    • 3 bell peppers (red, yellow, green), thinly sliced
    • 1 large red onion, thinly sliced
    • 2 tablespoons olive oil
    • 2 teaspoons chili powder
    • 1 teaspoon cumin
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • Salt and black pepper to taste
    • 1 cup cherry tomatoes, halved
    • 1 cup cooked rice (white or brown)
    • 1 cup black beans, drained and rinsed
    • 1 cup corn kernels (fresh or frozen)
    • 1 cup shredded cheddar cheese
    • Fresh cilantro, chopped (for garnish)
    • Sour cream (optional, for serving)
    • Lime wedges (for serving)

    Instructions:

    Preheat the Oven:

    Preheat your oven to 400°F (200°C).

    Prepare the Chicken and Vegetables:

    In a large mixing bowl, combine the chicken strips, sliced bell peppers, and red onion.

    Drizzle olive oil over the mixture and toss to coat evenly.

    Season the Fajita Mix:

    In a small bowl, mix together chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper.

    Sprinkle the seasoning mix over the chicken and vegetables, ensuring an even coating.

    Toss again to distribute the spices.

    Arrange on a Baking Sheet:

    Line a baking sheet with parchment paper or lightly grease it.

    Spread the seasoned chicken and vegetables evenly on the baking sheet.

    Bake in the Oven:

    Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the vegetables are tender, stirring halfway through.

    Prepare the Toppings:

    While the fajita mix is baking, prepare the toppings.

    Cut cherry tomatoes in half, cook the rice, drain and rinse the black beans, and gather the cheese, cilantro, sour cream, and lime wedges.

    Assemble the Bowls:

    Once the chicken and vegetables are done baking, assemble the fajita bowls.

    In individual serving bowls, layer cooked rice, black beans, corn, baked chicken fajita mix, cherry tomatoes, and shredded cheddar cheese.

    Garnish and Serve:

    Garnish the bowls with chopped cilantro and serve with optional sides of sour cream and lime wedges.
