- 2 large yellow onions
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 1 cup panko breadcrumbs
- Cooking spray or olive oil for spraying/brushing
Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper and set aside.
Peel the onions and slice them into rings about 1/2 inch thick. Separate the rings and set aside.
In a shallow dish, mix together the flour, paprika, garlic powder, salt, and black pepper. In another shallow dish, beat the eggs.
Dip each onion ring into the seasoned flour mixture, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off.
Coat the onion ring in the panko breadcrumbs, pressing gently to adhere the crumbs to the onion. Place the coated onion ring onto the prepared baking sheet. Repeat with the remaining onion rings.
Once all the onion rings are coated and on the baking sheet, lightly spray them with cooking spray or brush them with olive oil. This will help them crisp up in the oven.
Bake the onion rings in the preheated oven for about 12-15 minutes, or until they are golden brown and crispy, flipping them halfway through the baking time for even browning.
Once done, remove the onion rings from the oven and let them cool for a few minutes before serving.
Serve the baked onion rings hot with your favorite dipping sauce, such as ketchup, ranch dressing, or aioli.
