Banana Crumb Cake Recipe


    For the Cake:

    • 2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3 ripe bananas, mashed

    For the Crumb Topping:

    • 1/2 cup all-purpose flour
    • 1/2 cup granulated sugar
    • 1/4 cup unsalted butter, melted
    • 1/2 teaspoon ground cinnamon

    Optional Glaze:

    • 1/2 cup powdered sugar
    • 1-2 tablespoons milk
    • 1/2 teaspoon vanilla extract


    Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.

    Prepare the Crumb Topping:

    In a small bowl, combine the flour, sugar, melted butter, and ground cinnamon. Mix until crumbly. Set aside.

    Make the Cake Batter:

    In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.

    In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add the eggs one at a time, beating well after each addition.

    Stir in the vanilla extract and mashed bananas.

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

    Assemble the Cake:

    Pour the banana cake batter into the prepared baking dish, spreading it evenly. Sprinkle the crumb topping over the batter, covering it completely.


    Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean. The crumb topping should be golden brown.

    Optional Glaze:

    If desired, whisk together the powdered sugar, milk, and vanilla extract to make a glaze. Drizzle the glaze over the cooled cake.

    Cool and Serve:

    Allow the cake to cool in the baking dish on a wire rack. Once completely cooled, cut into squares and serve.
