Banana Cupcakes Recipe


    For the Cupcakes:

    • 1 1/2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 3/4 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3 ripe bananas, mashed
    • 1/2 cup buttermilk

    For the Cream Cheese Frosting:

    8 oz (225g) cream cheese, softened

    1/2 cup unsalted butter, softened

    3 cups powdered sugar

    1 teaspoon vanilla extract

    Optional Toppings:

    Sliced bananas or banana chips for garnish


    Preheat the Oven:

    Preheat your oven to 350°F (180°C). Line a muffin tin with cupcake liners.

    Prepare the Dry Ingredients:

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

    Cream the Butter and Sugar:

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add Eggs and Vanilla:

    Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix well.

    Mash Bananas:

    Peel and mash the ripe bananas with a fork. Add the mashed bananas to the batter and mix until combined.

    Alternate Dry Ingredients and Buttermilk:

    Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined. Be careful not to overmix.

    Fill Cupcake Liners:

    Spoon the batter into the cupcake liners, filling each about 2/3 full.


    Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before frosting.

    Prepare Cream Cheese Frosting:

    In a separate bowl, beat together the softened cream cheese and butter until smooth. Add the powdered sugar and vanilla extract, and continue to beat until creamy and well combined.

    Frost the Cupcakes:

    Once the cupcakes are completely cooled, frost them with the cream cheese frosting using a piping bag or a spatula.

    Garnish (Optional):

    Garnish the cupcakes with sliced bananas or banana chips if desired.
