Banana pancakes recipe

    • 2 ripe bananas
    • 1 1/2 cups all-purpose flour
    • 1 tablespoon sugar
    • 1 tablespoon baking powder
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 1 cup milk
    • 2 large eggs
    • 2 tablespoons unsalted butter, melted
    • Optional toppings: maple syrup, sliced bananas, chopped nuts, or whipped cream

    Mash the Bananas:

Peel the ripe bananas and place them in a mixing bowl.

Use a fork to mash the bananas until smooth.

    Prepare Dry Ingredients:

In a separate bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.

    Combine Wet Ingredients:

Add the mashed bananas to the dry ingredients.

Pour in the vanilla extract, milk, and crack the eggs into the bowl.

Mix the ingredients together until just combined. Be careful not to overmix; a few lumps are okay.

    Melt the Butter:

Melt the butter in a microwave or on the stovetop and let it cool slightly.

    Add Melted Butter:

Pour the melted butter into the batter and gently fold it in.

    Preheat the Griddle or Pan:

Preheat a griddle or non-stick pan over medium heat. If needed, lightly grease the surface with cooking spray or butter.

    Cook the Pancakes:

Pour 1/4 cup of batter onto the hot griddle for each pancake.

Cook until bubbles form on the surface of the pancake and the edges start to look set (about 2-3 minutes).

Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.

Transfer the cooked pancakes to a plate.

Serve warm with your favorite toppings such as maple syrup, sliced bananas, chopped nuts, or a dollop of whipped cream.

Enjoy your delicious and fluffy banana pancakes!
