    • 1 pound (450g) fresh mushrooms (white button or cremini)
    • 1/2 cup olive oil
    • 1/4 cup balsamic vinegar
    • 3 cloves garlic, minced
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • 1 teaspoon dried basil
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
    • 1/4 cup fresh parsley, chopped (for garnish)


    Clean the mushrooms:

    Wipe the mushrooms clean with a damp cloth or paper towel. Trim the ends of the stems.

    Prepare the marinade:

    In a medium-sized bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, dried thyme, dried basil, salt, black pepper, and red pepper flakes if using.
