Bisquick Coffee Cake Recipe

    For the cake:

    • 2 cups Bisquick baking mix
    • 2/3 cup milk
    • 2 tablespoons granulated sugar
    • 1 egg

    For the topping:

    • 1/2 cup Bisquick baking mix
    • 1/2 cup packed brown sugar
    • 1 teaspoon ground cinnamon
    • 1/4 cup cold butter, cut into small pieces

    For the glaze (optional):

    • 1/2 cup powdered sugar
    • 1-2 tablespoons milk
    • 1/4 teaspoon vanilla extract


    Preheat your oven to 375°F (190°C). Grease a 9-inch square baking pan or coat it with non-stick cooking spray.

    In a mixing bowl, combine 2 cups of Bisquick baking mix, 2/3 cup of milk, 2 tablespoons of granulated sugar, and 1 egg. Mix until well combined.

    Pour the batter into the prepared baking pan, spreading it evenly.

    In a separate bowl, prepare the topping by combining 1/2 cup Bisquick baking mix, 1/2 cup packed brown sugar, and 1 teaspoon ground cinnamon. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

    Sprinkle the topping evenly over the cake batter in the pan.

    Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

    While the cake is baking, you can prepare the optional glaze. In a small bowl, mix together 1/2 cup powdered sugar, 1-2 tablespoons of milk, and 1/4 teaspoon of vanilla extract until smooth.

    Once the cake is done baking, remove it from the oven and let it cool for a few minutes in the pan.

    If desired, drizzle the glaze over the warm coffee cake.
