Blueberry Pound Cake Recipe

    For the Cake:

    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup sour cream
    • 2 cups fresh blueberries (tossed in 1 tablespoon flour to prevent sinking)

    For the Glaze:

    • 1 cup powdered sugar
    • 2 tablespoons milk
    • 1/2 teaspoon vanilla extract

    Preheat the Oven:

    • Preheat your oven to 325°F (163°C).
    • Grease and flour a 10-inch tube or bundt pan.

    Cream the Butter and Sugar:

    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add Eggs and Vanilla:

    • Add the eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract.

    Combine Dry Ingredients:

    • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

    Alternate Mixing:

    • Gradually add the dry ingredients to the butter mixture, alternating with the sour cream.
    • Begin and end with the dry ingredients.

    Fold in Blueberries:

    • Gently fold the fresh blueberries, which have been tossed in 1 tablespoon of flour, into the batter.
    • This helps prevent the blueberries from sinking to the bottom during baking.

    Pour into the Pan:

    • Pour the batter into the prepared tube or bundt pan, spreading it evenly.

    • Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.
    • The baking time may vary, so keep an eye on it and perform the toothpick test.

    • Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.

    Prepare the Glaze:

    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to create the glaze.

    Drizzle with Glaze:

    • Once the cake is completely cooled, drizzle the glaze over the top.

    Serve and Enjoy:

    • Slice and serve the Blueberry Pound Cake.
    • The burst of blueberries combined with the rich pound cake is a heavenly treat.

    • For added freshness, garnish the top of the cake with a handful of fresh blueberries before serving.

This Blueberry Pound Cake is a delightful combination of moist, buttery pound cake and juicy blueberries. It’s a perfect dessert for brunch, tea time, or any special occasion. Enjoy the sweet and tangy flavor of blueberries in every scrumptious bite!
