Caramel Apple Cheesecake


    For the Crust:

    • 1 1/2 cups graham cracker crumbs
    • 1/2 cup unsalted butter, melted
    • 1/4 cup granulated sugar

    For the Cheesecake Filling:

    • 4 packages (32 ounces) cream cheese, softened
    • 1 cup granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup sour cream
    • 1/2 cup all-purpose flour

    For the Caramel Apple Topping:

    • 4 cups peeled, cored, and thinly sliced apples (use a mix of sweet and tart apples)
    • 1/2 cup unsalted butter
    • 1 cup brown sugar, packed
    • 1/4 cup heavy cream
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon salt


    Preheat the Oven:

    Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with butter or cooking spray.

    Make the Crust:

    In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar.

    Press the mixture into the bottom of the prepared springform pan, creating an even crust.

    Bake in the preheated oven for 10 minutes, then remove and set aside to cool.

    Prepare the Cheesecake Filling:

    In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add sugar and beat until well combined.

    Add eggs one at a time, beating well after each addition.

    Stir in vanilla extract, sour cream, and flour until the mixture is smooth and well incorporated.

    Pour the Filling into the Crust:

    Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.

    Bake the Cheesecake:

    Bake in the preheated oven for 50-60 minutes or until the center is set and the top is lightly browned.

    The edges should be slightly pulling away from the sides of the pan.

    Cool the Cheesecake:

    Allow the cheesecake to cool in the pan on a wire rack for about 1 hour, then refrigerate for at least 4 hours or overnight to chill and set.

    Make the Caramel Apple Topping:

    In a large skillet, melt butter over medium heat. Add sliced apples, brown sugar, heavy cream, vanilla extract, cinnamon, and salt.

    Cook, stirring occasionally, until the apples are tender and the sauce has thickened, about 10-15 minutes.

    Assemble the Cheesecake:

    Once the cheesecake is chilled, carefully remove it from the springform pan.

    Spoon the caramel apple topping over the chilled cheesecake, spreading it evenly.

    Serve and Enjoy:

    Slice the caramel apple cheesecake into pieces and serve.

    You can drizzle additional caramel sauce over individual slices if desired.
