    For the Tart Crust:

    • 1 1/4 cups all-purpose flour
    • 1/2 cup cold unsalted butter, cubed
    • 1/4 teaspoon salt
    • 3-4 tablespoons ice water

    For the Caramelized Onions:

    • 2 large onions, thinly sliced
    • 2 tablespoons unsalted butter
    • 1 tablespoon olive oil
    • 1 teaspoon sugar
    • Salt and black pepper to taste

    For the Filling:

    • 1 cup shredded Gruyere cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese

    For the Egg Mixture:

    • 2 large eggs
    • 1/2 cup heavy cream
    • Salt and black pepper to taste

    Optional Garnish:

    • Fresh thyme leaves
    • Balsamic glaze

Step 1: Prepare the Tart Crust

In a food processor, combine the flour, cold cubed butter, and salt.

Pulse until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, and pulse until the dough starts to come together.

Turn the dough out onto a lightly floured surface and knead it into a disk.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

    Step 2: Preheat the Oven

Preheat your oven to 375°F (190°C).

Step 3: Roll Out the Dough

On a floured surface, roll out the chilled dough into a circle large enough to fit your tart pan.

Carefully transfer the rolled-out dough to a 9-inch tart pan with a removable bottom.

Press the dough into the edges and trim any excess.

Prick the bottom of the crust with a fork.

Step 4: Blind Bake the Crust

Line the tart crust with parchment paper and fill it with pie weights or dried beans.

Bake the crust for about 15 minutes, then remove the weights and parchment paper.

Bake for an additional 5-7 minutes or until the crust is lightly golden. Allow it to cool.

    Step 5: Caramelize the Onions

In a skillet over medium-low heat, melt 2 tablespoons of butter and olive oil.

Add the thinly sliced onions and cook, stirring occasionally, until they become soft and golden brown.

Sprinkle sugar over the onions to help with caramelization.

Season with salt and black pepper to taste.

Cook for an additional 5-10 minutes until the onions are deeply caramelized.

Remove from heat and set aside.

    Step 6: Prepare the Filling

In a bowl, mix together the shredded Gruyere, mozzarella, and grated Parmesan cheeses.

    Step 7: Assemble the Tart

Spread the caramelized onions evenly over the pre-baked tart crust.

Sprinkle the cheese mixture over the onions.

Step 8: Prepare the Egg Mixture

In a separate bowl, whisk together the eggs and heavy cream.

Season with salt and black pepper to taste.

Step 9: Pour the Egg Mixture

Pour the egg mixture over the caramelized onions and cheese in the tart shell.

    Step 10: Bake

Bake the tart in the preheated oven for 25-30 minutes or until the filling is set and the top is golden brown.

    Step 11: Garnish and Serve

Once out of the oven, let the tart cool for a few minutes.

Garnish with fresh thyme leaves and drizzle with balsamic glaze if desired.

Slice and serve the Cheesy Caramelized Onion Tart warm.

This Cheesy Caramelized Onion Tart is a savory delight, combining the sweetness of caramelized onions with the richness of three cheeses.

It’s a perfect appetizer or main course for any occasion. Enjoy!
