Cheesy Roasted Garlic Soup With Sourdough Crumble Recipe


    For the Soup:

    • 2 heads of garlic
    • 1 tablespoon olive oil
    • 1 large onion, finely chopped
    • 3 tablespoons unsalted butter
    • 1/4 cup all-purpose flour
    • 4 cups chicken or vegetable broth
    • 2 cups whole milk
    • 1 cup heavy cream
    • 2 cups shredded sharp cheddar cheese
    • Salt and pepper to taste

    For the Sourdough Crumble:

    • 2 cups sourdough bread, cubed
    • 2 tablespoons olive oil
    • 1 teaspoon dried thyme
    • Salt and pepper to taste


    Roasting Garlic:

    Preheat the oven to 400°F (200°C).

    Cut the tops off the heads of garlic to expose the cloves.

    Place the garlic heads on a piece of foil, drizzle with olive oil, and wrap them in the foil.

    Roast in the preheated oven for about 40-45 minutes or until the garlic cloves are soft and golden. Let them cool.

    Sourdough Crumble:

    In a bowl, toss the cubed sourdough with olive oil, dried thyme, salt, and pepper.

    Spread the seasoned sourdough on a baking sheet and bake in the preheated oven at 350°F (180°C) for about 15-20 minutes or until golden and crispy. Set aside.

    Cheesy Roasted Garlic Soup:

    In a large pot, melt the butter over medium heat.

    Add the chopped onions and sauté until translucent.

    Squeeze the roasted garlic cloves into the pot and stir well.

    Sprinkle the flour over the mixture and stir continuously for 2-3 minutes to create a roux.

    Gradually pour in the chicken or vegetable broth, whisking constantly to avoid lumps.

    Add the whole milk and heavy cream, stirring continuously until the soup thickens.

    Reduce the heat to low and add the shredded cheddar cheese, stirring until melted and smooth.

    Season with salt and pepper to taste.


    Ladle the soup into bowls.

    Top each serving with a generous sprinkle of the sourdough crumble.

    Garnish with additional thyme or shredded cheese if desired.
