Cheesy Tomato And Zucchini Casserole Recipe


    • 2 large zucchini, sliced into 1/4-inch rounds
    • 1 onion, thinly sliced
    • 3 cloves garlic, minced
    • 1 can (14 oz) diced tomatoes, drained
    • 1 cup shredded mozzarella cheese
    • 1 cup shredded cheddar cheese
    • 1/2 cup grated Parmesan cheese
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • Salt and pepper to taste
    • 2 tablespoons olive oil
    • Fresh basil leaves for garnish (optional)


    Preheat the Oven:

    Preheat your oven to 375°F (190°C).

    Prepare the Vegetables:

    Heat olive oil in a large skillet over medium heat.

    Add sliced zucchini, onions, and minced garlic to the skillet.

    Sauté until the vegetables are tender, about 5-7 minutes.

    Season with salt, pepper, dried oregano, and dried basil. Mix well.


    In a greased baking dish, arrange half of the sautéed zucchini, onion, and garlic mixture as the first layer.

    Sprinkle half of the diced tomatoes over the zucchini layer.

    Sprinkle half of each type of cheese (mozzarella, cheddar, and Parmesan) over the tomatoes.

    Repeat the layers with the remaining zucchini, tomatoes, and cheeses.


    Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, allowing the cheese to melt and the casserole to heat through.

    Broil (Optional):

    If you want a golden-brown cheesy crust on top, uncover the casserole and broil for an additional 2-3 minutes. Keep a close eye to prevent burning.


    Remove from the oven and let it cool for a few minutes.

    Garnish with fresh basil leaves if desired.
