Chicken Enchilada Casserole Recipe

    • 2 cups cooked and shredded chicken
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (15 oz) corn kernels, drained
    • 1 cup diced bell peppers (a mix of colors)
    • 1 cup diced onions
    • 2 cloves garlic, minced
    • 1 can (10 oz) red enchilada sauce
    • 1 can (10 oz) green enchilada sauce
    • 2 cups shredded Mexican blend cheese
    • 1 teaspoon ground cumin
    • 1 teaspoon chili powder
    • Salt and pepper to taste
    • 12 corn tortillas
    • Chopped fresh cilantro and sliced green onions for garnish


    Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the shredded chicken, black beans, corn, diced bell peppers, diced onions, minced garlic, ground cumin, chili powder, salt, and pepper.

    Mix well to combine.

    In a separate bowl, mix together the red enchilada sauce and green enchilada sauce.

    Lightly grease a 9×13-inch baking dish.

    Spread a small amount of the enchilada sauce mixture on the bottom of the baking dish.

    Place a layer of corn tortillas over the sauce, covering the bottom of the dish.

    Add a portion of the chicken mixture over the tortillas, spreading it evenly.

    Drizzle some of the enchilada sauce over the chicken mixture.

    Sprinkle a portion of shredded cheese over the sauce.

    Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.

    Cover the baking dish with aluminum foil.

    Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.

    Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and lightly browned.

    Remove from the oven and let it cool for a few minutes before serving.

    Garnish with chopped cilantro and sliced green onions before serving.
