Chilli Oil Ramen Recipe

    Ingredients:

    For Chilli Oil:

    • 1 cup vegetable oil
    • 2 tablespoons sesame oil
    • 1/4 cup crushed red pepper flakes
    • 2 tablespoons soy sauce
    • 1 tablespoon sugar
    • 1 teaspoon Chinese five-spice powder
    • 4 cloves garlic, minced
    • 1 tablespoon grated ginger

    For Ramen:

    • 4 packs of ramen noodles
    • 8 cups chicken or vegetable broth
    • 1/4 cup soy sauce
    • 2 tablespoons rice vinegar
    • 1 tablespoon mirin (optional)
    • 1 cup sliced shiitake mushrooms
    • 2 cups baby spinach
    • 4 soft-boiled eggs, peeled and halved
    • Sliced green onions for garnish
    • Sesame seeds for garnish

    Instructions:

    Prepare the Chilli Oil:

    a. In a small saucepan, heat vegetable oil and sesame oil over low heat.

    b. Add crushed red pepper flakes, soy sauce, sugar, Chinese five-spice powder, minced garlic, and grated ginger.

    c. Stir well and simmer for 5-7 minutes until the flavors infuse into the oil.

    d. Remove from heat and let it cool. Strain the oil to remove the solids, leaving only the flavorful oil.

    Prepare the Ramen Broth:

    a. In a large pot, bring the chicken or vegetable broth to a simmer.

    b. Add soy sauce, rice vinegar, and mirin. Adjust the seasoning to taste.

    c. Add sliced shiitake mushrooms and let them simmer for about 5 minutes until tender.

    d. Stir in the baby spinach and cook until wilted.

    Prepare the Ramen Noodles:

    a. Cook the ramen noodles according to the package instructions.

    b. Drain and rinse under cold water to stop the cooking process.

    Assemble the Chilli Oil Ramen:

    a. Divide the cooked ramen noodles among serving bowls.

    b. Ladle the hot broth with mushrooms and spinach over the noodles.

    c. Drizzle a generous amount of the prepared chili oil over each bowl.

    Garnish and Serve:

    a. Top each bowl with soft-boiled eggs, sliced green onions, and sesame seeds.

    b. Serve immediately and enjoy your delicious Chilli Oil Ramen!
