Chorizo Cornbread Stuffing Recipe

    Ingredients:

    • 1 pound chorizo sausage, casing removed
    • 1 cup unsalted butter
    • 1 large onion, finely chopped
    • 4 celery stalks, diced
    • 4 cloves garlic, minced
    • 1 red bell pepper, chopped
    • 1 green bell pepper, chopped
    • 1 teaspoon dried thyme
    • 1 teaspoon dried sage
    • 1 teaspoon dried rosemary
    • 1 teaspoon dried oregano
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon paprika
    • Salt and black pepper to taste
    • 8 cups cornbread, cubed and toasted
    • 1 cup chicken or vegetable broth
    • 2 large eggs, beaten
    • Fresh parsley, chopped (for garnish)

    Instructions:

    Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, cook the chorizo sausage, breaking it apart with a spatula, until browned and cooked through. Remove the chorizo from the skillet and set it aside.

    In the same skillet, melt the butter. Add the chopped onion, celery, and minced garlic. Cook until the vegetables are softened, about 5-7 minutes.

    Stir in the red and green bell peppers and cook for an additional 3-4 minutes until they are tender.

    Add the dried thyme, sage, rosemary, oregano, ground cumin, paprika, salt, and black pepper. Stir well to combine the spices with the vegetables.

    In a large mixing bowl, combine the toasted cornbread cubes and the cooked chorizo.

    Pour the vegetable and spice mixture over the cornbread and chorizo. Toss gently to combine.

    In a separate bowl, whisk together the chicken or vegetable broth and beaten eggs. Pour this mixture over the cornbread mixture, ensuring it is evenly distributed. Toss until everything is well coated.

    Transfer the stuffing mixture to a greased baking dish.

    Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the stuffing is cooked through.

    Remove from the oven and let it cool for a few minutes before serving.

    Garnish with chopped fresh parsley before serving.
