Cinnamon Raisin Granola Recipe

    Ingredients:

    • 3 cups old-fashioned oats
    • 1 cup chopped nuts (almonds, walnuts, or your choice)
    • 1/2 cup unsweetened shredded coconut
    • 1/2 cup honey or maple syrup
    • 1/4 cup melted coconut oil or any neutral oil
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon salt
    • 1 cup raisins or other dried fruits (cranberries, apricots, etc.)

    Instructions:

    Preheat the Oven:

    Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients:

    In a large bowl, combine the oats, chopped nuts, and shredded coconut. Mix well.

    Prepare Wet Ingredients:

    In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, ground cinnamon, vanilla extract, and salt until well combined.

    Combine Wet and Dry Ingredients:

    Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.

    Spread on Baking Sheet:

    Spread the granola mixture evenly onto the prepared baking sheet, pressing it down slightly with a spatula for clusters.

    Bake:

    Bake in the preheated oven for 25-30 minutes or until the granola turns golden brown, stirring halfway through to ensure even baking.

    Add Raisins:

    Remove the granola from the oven and add the raisins (or other dried fruits). Gently toss to combine.

    Cool:

    Allow the granola to cool completely on the baking sheet. It will continue to crisp up as it cools.

    Store:

    Once completely cooled, transfer the granola to an airtight container. It can be stored at room temperature for up to two weeks.

    Serve:
