Coconut Cake Recipe

    For the Cake:

    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 1 1/2 cups granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup coconut milk
    • 1 cup shredded coconut (sweetened)

    For the Frosting:

    • 1/2 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 1/2 cup coconut milk
    • 1 teaspoon vanilla extract
    • 2 cups shredded coconut (sweetened), for decoration


    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Prepare Dry Ingredients:

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

    Cream Butter and Sugar:

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add Eggs and Vanilla:

    Beat in the eggs one at a time, ensuring each is well incorporated. Add the vanilla extract and mix until combined.

    Alternate Dry Ingredients and Coconut Milk:

    Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk. Begin and end with the dry ingredients. Mix until just combined.

    Fold in Shredded Coconut:

    Gently fold in the shredded coconut until evenly distributed in the batter.

    Divide and Bake:

    Divide the batter equally between the prepared cake pans. Smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

    Cool the Cakes:

    Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

    Prepare the Frosting:

    In a large bowl, beat together the softened butter, powdered sugar, coconut milk, and vanilla extract until smooth and creamy.

    Assemble the Cake:

    Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the entire cake.

    Decorate with Shredded Coconut:

    Press shredded coconut onto the frosted cake for decoration. You can also sprinkle coconut on top.
