Delicious Almond Biscotti Recipe


    • 2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 teaspoon almond extract
    • 1 cup whole almonds, toasted and roughly chopped

    For Garnish:

    • 4 ounces dark or white chocolate, melted (optional)
    • Additional chopped almonds (optional)


    Preheat the Oven:

    Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

    Toast Almonds:

    Spread the whole almonds on a baking sheet and toast them in the preheated oven for about 8-10 minutes or until they become fragrant. Allow them to cool, then roughly chop.

    Mix Dry Ingredients:

    In a medium-sized bowl, whisk together the flour, baking powder, and salt.

    Cream Butter and Sugar:

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add Eggs and Extracts:

    Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and almond extract.

    Combine Wet and Dry Ingredients:

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the toasted and chopped almonds.

    Shape the Dough:

    Divide the dough in half. On a floured surface, shape each half into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, leaving space between them.

    First Bake:

    Bake in the preheated oven for about 25-30 minutes, or until the logs are golden brown and firm to the touch.


    Allow the logs to cool on the baking sheet for 15 minutes. Reduce the oven temperature to 325°F (160°C).

    Slice the Biscotti:

    Using a sharp knife, slice the logs into 1/2-inch thick diagonal slices. Place the slices back on the baking sheet, cut side down.

    Second Bake:

    Bake the biscotti for an additional 15-20 minutes or until they are crisp and golden. Allow them to cool completely on a wire rack.

    Optional Garnish:

    If desired, drizzle melted chocolate over the cooled biscotti and sprinkle with additional chopped almonds. Allow the chocolate to set before serving.
