Easy Ratatouille (One Pot Vegetable Stew) Recipe

    Ingredients:

    • 1 medium eggplant, diced
    • 2 medium zucchinis, diced
    • 1 large onion, diced
    • 1 red bell pepper, diced
    • 1 yellow bell pepper, diced
    • 3 cloves garlic, minced
    • 4 ripe tomatoes, diced
    • 2 tablespoons tomato paste
    • 2 tablespoons olive oil
    • 1 teaspoon dried thyme
    • 1 teaspoon dried basil
    • Salt and pepper to taste
    • Fresh basil leaves for garnish (optional)

    Instructions:

    Prep the Vegetables:

    Wash all the vegetables thoroughly. Dice the eggplant, zucchinis, onion, red bell pepper, and yellow bell pepper into bite-sized pieces. Mince the garlic. Dice the tomatoes. Set aside.

    Sauté the Aromatics:

    In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until fragrant and onions are translucent, about 3-4 minutes.

    Add the Vegetables:

    Once the onions are softened, add diced eggplant, zucchinis, red bell pepper, and yellow bell pepper to the pot. Stir well to combine with the onions and garlic.

    Season and Cook:

    Sprinkle dried thyme and dried basil over the vegetables. Season with salt and pepper according to your taste. Stir in the tomato paste and diced tomatoes. Mix until everything is evenly combined.

    Simmer:

    Reduce the heat to low, cover the pot, and let the ratatouille simmer for about 20-25 minutes, stirring occasionally, until the vegetables are tender but not mushy.

    Serve:

    Once the vegetables are cooked to your liking, taste and adjust seasoning if necessary. Remove the pot from the heat. Optionally, garnish with fresh basil leaves before serving.
