Easy Roasted Pork Tenderloin Recipe

    • 2 pork tenderloins (about 1 to 1.5 pounds each)
    • 2 tablespoons olive oil
    • 2 teaspoons minced garlic
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • 1 teaspoon smoked paprika
    • Salt and black pepper to taste
    • 2 tablespoons Dijon mustard
    • 2 tablespoons honey

    Preheat the Oven:

Preheat your oven to 400°F (200°C).

    Prepare the Pork Tenderloins:

Pat the pork tenderloins dry with paper towels.

Trim any excess fat and silver skin from the tenderloins.

    Season the Pork:

In a small bowl, mix together olive oil, minced garlic, dried thyme, dried rosemary, smoked paprika, salt, and black pepper.

Rub the mixture all over the pork tenderloins, ensuring they are evenly coated.

    Sear the Pork (Optional):

If you have time, you can sear the pork on all sides in a hot skillet with a bit of olive oil. This step is optional but adds extra flavor.

    Prepare the Glaze:

In a small bowl, whisk together Dijon mustard and honey to create the glaze.

    Coat with Glaze:

Brush the Dijon-honey glaze over the seasoned pork tenderloins, covering them well.

    Roast in the Oven:

Place the pork tenderloins on a baking sheet or in a roasting pan.

Roast in the preheated oven for about 20-25 minutes or until the internal temperature reaches 145°F (63°C).

    Rest and Slice:

Remove the pork from the oven and let it rest for about 5-10 minutes before slicing. This allows the juices to redistribute and keeps the meat moist.

Slice the roasted pork tenderloin into medallions and serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.

Enjoy your easy and flavorful roasted pork tenderloin!
