Gaji Mari (Korean-Style Eggplant Rolls) Recipe


    For the eggplant rolls:

    • 2 large Japanese or Chinese eggplants
    • 1 cup ground pork or beef (optional)
    • 1 cup carrots, julienned
    • 1 cup zucchini, julienned
    • 1 cup onion, thinly sliced
    • 3 cloves garlic, minced
    • 2 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • 1 tablespoon sugar
    • 1 teaspoon ginger, grated
    • Salt and pepper to taste
    • Cooking oil for frying

    For the dipping sauce:

    • 3 tablespoons soy sauce
    • 1 tablespoon rice vinegar
    • 1 tablespoon honey or sugar
    • 1 teaspoon sesame oil
    • 1 green onion, finely chopped (optional)


    Prepare the Eggplants:

    Cut the eggplants into thin, long strips, about 1/4 inch thick.

    Sprinkle the eggplant strips with salt and let them sit for about 15 minutes to draw out excess moisture.

    Pat the eggplants dry with a paper towel.

    Cook the Filling:

    In a pan, heat a bit of cooking oil over medium heat.

    Add minced garlic and sauté until fragrant.

    If using ground meat, add it to the pan and cook until browned.

    Add carrots, zucchini, and onions to the pan. Cook for a few minutes until the vegetables are slightly softened.

    In a small bowl, mix soy sauce, sesame oil, sugar, and grated ginger.

    Pour the sauce over the vegetables and meat. Stir well and cook until the mixture is heated through.

    Set aside to cool.

    Assemble the Rolls:

    Place a spoonful of the vegetable and meat mixture at one end of an eggplant strip.

    Roll the eggplant around the filling to create a neat roll.

    Repeat the process with the remaining eggplant strips and filling.

    Fry the Rolls:

    Heat some cooking oil in a pan over medium heat.

    Carefully place the eggplant rolls in the pan, seam side down, and cook until they are golden brown on all sides.

    Remove the rolls from the pan and place them on a paper towel to absorb excess oil.

    Make the Dipping Sauce:

    In a small bowl, mix soy sauce, rice vinegar, honey (or sugar), sesame oil, and chopped green onion (if using).


    Arrange the Gaji Mari on a serving platter and serve with the dipping sauce on the side.
