Hearty Taco Soup Recipe

    Ingredients:

    • 1 lb ground beef or turkey
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 1 bell pepper, diced (any color)
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (15 oz) kidney beans, drained and rinsed
    • 1 can (15 oz) corn kernels, drained
    • 1 can (15 oz) diced tomatoes
    • 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)
    • 1 packet taco seasoning
    • 4 cups beef or vegetable broth
    • 1 cup water
    • Salt and pepper to taste
    • Optional toppings: shredded cheese, sour cream, diced avocado, chopped green onions, cilantro, tortilla strips

    Instructions:

    In a large pot or Dutch oven, brown the ground beef or turkey over medium-high heat. Break it into small pieces with a spatula as it cooks.

    Add diced onions and minced garlic to the pot. Cook until the onions are translucent and the garlic is fragrant.

    Drain excess fat if needed.

    Stir in the taco seasoning, coating the meat and onions evenly.

    Add diced bell pepper, black beans, kidney beans, corn, diced tomatoes, and diced tomatoes with green chilies to the pot. Mix well.

    Pour in the beef or vegetable broth and water. Stir to combine all the ingredients.

    Bring the soup to a boil, then reduce the heat to simmer. Allow it to simmer for at least 15-20 minutes to let the flavors meld together.

    Season the soup with salt and pepper to taste.

    Serve the Hearty Taco Soup hot, and garnish with your favorite toppings such as shredded cheese, sour cream, diced avocado, chopped green onions, cilantro, or tortilla strips.
