How to Make Fried Rice with Frozen Goods

    Ingredients:

    • 2 cups cooked and cooled white rice (preferably day-old)
    • 1 cup frozen mixed vegetables (peas, carrots, corn, and green beans)
    • 1 cup frozen cooked shrimp or chicken (optional)
    • 3 tablespoons soy sauce
    • 2 tablespoons oyster sauce
    • 1 teaspoon sesame oil
    • 2 tablespoons vegetable oil
    • 2 eggs, beaten
    • 4 green onions, thinly sliced
    • 2 cloves garlic, minced
    • 1 teaspoon ginger, grated
    • Salt and pepper to taste

    Instructions:

    Prepare the Ingredients:

    If using day-old rice, break up any clumps to ensure it’s separated.

    Thaw the frozen vegetables and shrimp or chicken if they are frozen.

    Beat the eggs in a bowl and set aside.

    Slice the green onions, mince the garlic, and grate the ginger.

    Cook the Protein (if using):

    Heat a large skillet or wok over medium-high heat.

    Add 1 tablespoon of vegetable oil.

    If using shrimp or chicken, cook until they are no longer pink in the center (shrimp) or cooked through (chicken).

    Remove the protein from the skillet and set aside.

    Sauté Aromatics:

    In the same skillet, add the remaining 1 tablespoon of oil.

    Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

    Cook Vegetables:

    Add the frozen mixed vegetables to the skillet.

    Stir-fry for 2-3 minutes until they are heated through and slightly tender.

    Add Rice:

    Add the cooked rice to the skillet, breaking up any clumps and ensuring an even mix with the vegetables.

    Combine Sauce:

    In a small bowl, mix soy sauce, oyster sauce, and sesame oil.

    Pour the sauce over the rice and vegetables, stirring well to coat evenly.

    Make a Well for Eggs:

    Push the rice mixture to the sides of the skillet, creating a well in the center.

    Scramble Eggs:

    Pour the beaten eggs into the well and scramble until just cooked through.

    Combine Everything:

    Mix the scrambled eggs with the rice and vegetables.

    Add Protein and Green Onions:

    If using shrimp or chicken, add it back to the skillet.

    Stir in sliced green onions.

    Season and Serve:

    Season the fried rice with salt and pepper to taste.

    Continue to stir-fry for an additional 2-3 minutes until everything is well combined and heated through.

    Serve Hot:

    Transfer the fried rice to a serving dish and serve hot.

    Garnish with additional green onions if desired.
