Instant Pot Vegetable Tagine Recipe

    • 1 cup diced carrots
    • 1 cup diced potatoes
    • 1 cup diced bell peppers (mix of colors)
    • 1 cup diced zucchini
    • 1 cup diced eggplant
    • 1 cup diced tomatoes
    • 1 onion, finely chopped
    • 3 cloves garlic, minced
    • 1/2 cup chickpeas (canned, drained and rinsed)
    • 1/4 cup raisins
    • 1/4 cup chopped fresh cilantro
    • 1/4 cup chopped fresh parsley
    • 2 tablespoons olive oil
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon ground turmeric
    • 1 teaspoon paprika
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon cayenne pepper (adjust to taste)
    • Salt and pepper to taste
    • 2 cups vegetable broth
    • 1 cup couscous (for serving)



    Wash and chop all the vegetables.

    Rinse the chickpeas and drain them.

    Chop the fresh cilantro and parsley.

    In a small bowl, mix together the ground cumin, coriander, turmeric, paprika, cinnamon, cayenne pepper, salt, and pepper to create a spice blend.


    Set your Instant Pot to “Sauté” mode and add olive oil.

    Once the oil is hot, add chopped onions and minced garlic.

    Sauté until the onions are translucent.

    Adding Spices:

    Add the spice blend to the sautéed onions and garlic.

    Stir well to coat the vegetables in the spices.

    Vegetables and Chickpeas:

    Add the diced carrots, potatoes, bell peppers, zucchini, eggplant, tomatoes, chickpeas, and raisins to the Instant Pot. Mix everything together.


    Pour in the vegetable broth to deglaze the pot, scraping up any bits stuck to the bottom.

    Pressure Cooking:

    Close the Instant Pot lid, set the valve to “Sealing,” and switch to “Pressure Cook” mode.

    Set the cooking time to 5 minutes.

    Natural Release:

    Once the cooking time is complete, allow the Instant Pot to naturally release pressure for 10 minutes.

    Then, carefully quick release any remaining pressure.

    Finishing Touches:

    Open the lid and stir in chopped cilantro and parsley.

    Adjust seasoning if necessary.


    Prepare couscous according to package instructions.

    Serve the Instant Pot Vegetable Tagine over a bed of couscous.


    Garnish with additional fresh herbs if desired.
