Lemon Blueberry Cupcakes With Lemon Cream Cheese Frosting

    Ingredients:

    For the Cupcakes:

    • 1 1/2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • Zest of 2 lemons
    • 2 tablespoons fresh lemon juice
    • 1/2 cup sour cream
    • 1 cup fresh blueberries, washed and patted dry

    For the Lemon Cream Cheese Frosting:

    • 8 oz cream cheese, softened
    • 1/2 cup unsalted butter, softened
    • 4 cups powdered sugar
    • Zest of 1 lemon
    • 2 tablespoons fresh lemon juice
    • 1 teaspoon vanilla extract

    Instructions:

    For the Cupcakes:

    Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

    In a large bowl or stand mixer, cream together the softened butter and granulated sugar until light and fluffy.

    Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.

    Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients, mixing until just combined.

    Gently fold in the fresh blueberries until evenly distributed in the batter.

    In a large bowl or stand mixer, beat together the softened cream cheese and butter until smooth and creamy.

    Add powdered sugar, one cup at a time, beating well after each addition.

    Stir in the lemon zest, lemon juice, and vanilla extract, and continue to beat until the frosting is smooth and fluffy.

    Once the cupcakes are completely cooled, pipe or spread the lemon cream cheese frosting on top of each cupcake.

    Optional: Garnish with additional lemon zest or fresh blueberries for a decorative touch.
