Lemon Blueberry Scones Recipe


    • 2 cups all-purpose flour
    • 1/3 cup granulated sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, cold and cut into small pieces
    • 1 cup fresh blueberries
    • Zest of 1 lemon
    • 1/2 cup milk (whole or buttermilk)
    • 1 large egg
    • 1 teaspoon vanilla extract

    For the Glaze:

    • 1 cup powdered sugar
    • 2 tablespoons fresh lemon juice
    • Zest of 1 lemon


    Preheat the Oven:

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

    Prepare Dry Ingredients:

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

    Incorporate Butter:

    Add the cold, diced butter to the dry ingredients. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.

    Add Blueberries and Lemon Zest:

    Gently fold in the fresh blueberries and lemon zest into the flour-butter mixture.

    Combine Wet Ingredients:

    In a separate bowl, whisk together the milk, egg, and vanilla extract.

    Mix Wet and Dry Ingredients:

    Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; the dough should be slightly sticky.

    Shape the Dough:

    Turn the dough onto a floured surface and pat it into a circle, about 1 inch (2.5 cm) thick. If the dough is too sticky, you can sprinkle a little extra flour on top.

    Cut Scones:

    Use a sharp knife or a biscuit cutter to cut the dough into wedges or rounds.


    Place the scones on the prepared baking sheet and bake in the preheated oven for 15-18 minutes, or until they are golden brown on top.

    Prepare Glaze:

    While the scones are baking, prepare the glaze by whisking together the powdered sugar, lemon juice, and lemon zest until smooth.

    Glaze the Scones:

    Once the scones are done baking, allow them to cool for a few minutes. Drizzle the glaze over the warm scones.

    Serve and Enjoy:
