Lemon Cooler Cookies Recipe

    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 tablespoons fresh lemon juice
    • 2 teaspoons lemon zest
    • 2 1/2 cups all-purpose flour

    Preheat the Oven:

    Cream Butter and Sugar:

    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add Wet Ingredients:

    Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract, fresh lemon juice, and lemon zest. Mix until well combined.

    Combine Dry Ingredients:

    In a separate bowl, whisk together the all-purpose flour, baking soda, cream of tartar, and salt.

    Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

    Chill the Dough:

    Cover the dough and chill it in the refrigerator for at least 1 hour. This will make it easier to handle and enhance the flavors.

    Shape Cookies:

    Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in powdered sugar to coat evenly.


    Place the coated cookie balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are set and lightly golden.


    Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
