Lemon Pound Cake Recipe

    Ingredients:

    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 3 cups all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup sour cream
    • 1/4 cup fresh lemon juice
    • 1 tablespoon lemon zest
    • 1 teaspoon vanilla extract

    For the Lemon Glaze:

    • 1 cup powdered sugar
    • 2 tablespoons fresh lemon juice
    • 1 teaspoon lemon zest

    Instructions:

    Preheat the Oven:

    Preheat your oven to 325°F (163°C).

    Grease and flour a 10-inch bundt pan.

    Creaming the Butter and Sugar:

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

    This may take about 3-5 minutes.

    Adding Eggs:

    Add the eggs one at a time, beating well after each addition.

    Mixing Dry Ingredients:

    In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

    Combining Wet and Dry Ingredients:

    Gradually add the dry ingredients to the wet ingredients, alternating with sour cream.

    Begin and end with the dry ingredients. Mix until just combined.

    Adding Lemon Flavor:

    Add the fresh lemon juice, lemon zest, and vanilla extract to the batter.

    Mix until well incorporated.

    Baking:

    Pour the batter into the prepared bundt pan.

    Smooth the top with a spatula. Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.

    Cooling:

    Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

    Lemon Glaze:

    In a small bowl, whisk together the powdered sugar, fresh lemon juice, and lemon zest until smooth.

    Glazing the Cake:

    Once the cake is completely cooled, drizzle the lemon glaze over the top.

    Let the glaze set before serving.

    Serving:

    Slice and serve the lemon pound cake.

    It’s delicious on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
