Mediterranean Cucumber Tomato Salad Recipe


    • 2 large cucumbers, diced
    • 4 ripe tomatoes, diced
    • 1 small red onion, thinly sliced
    • 1/2 cup Kalamata olives, pitted and halved
    • 1/2 cup crumbled feta cheese
    • 1/4 cup fresh parsley, chopped
    • 2 tablespoons extra virgin olive oil
    • 2 tablespoons red wine vinegar
    • 1 teaspoon dried oregano
    • Salt and pepper to taste


    Prepare the vegetables:

    Wash the cucumbers and tomatoes thoroughly under cold water.

    Pat them dry with a clean kitchen towel. Dice the cucumbers and tomatoes into bite-sized pieces.

    Thinly slice the red onion. Pit and halve the Kalamata olives. Chop the fresh parsley.

    Combine vegetables and olives:

    In a large mixing bowl, combine the diced cucumbers, tomatoes, sliced red onion, and halved Kalamata olives.

    Add feta cheese and parsley:

    Gently toss the crumbled feta cheese and chopped parsley with the vegetables in the mixing bowl.

    Prepare the dressing:

    In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

    Dress the salad:

    Pour the dressing over the cucumber, tomato, and olive mixture in the large bowl.

    Toss everything together until the vegetables are evenly coated with the dressing.

    Adjust seasoning:

    Taste the salad and adjust the seasoning with additional salt and pepper if needed, according to your preference.

    Chill and serve:

    Cover the bowl with plastic wrap or transfer the salad to a serving dish.

    Refrigerate for at least 30 minutes to allow the flavors to meld together.

    Serve chilled as a refreshing side dish or as a light meal on its own.

    Optional garnish:

    Before serving, you can garnish the salad with additional crumbled feta cheese and fresh parsley for extra flavor and presentation.
