    For the Crab Cakes:

    • 1 pound lump crab meat, picked through for shells
    • 1/2 cup breadcrumbs
    • 1/4 cup mayonnaise
    • 1 large egg
    • 2 tablespoons chopped fresh cilantro
    • 2 tablespoons chopped green onions
    • 1 tablespoon fish sauce
    • 1 teaspoon red chili flakes (optional)
    • 1 teaspoon grated ginger
    • 1 teaspoon minced garlic
    • Salt and black pepper to taste
    • 2 tablespoons vegetable oil (for frying)

For the Nước Chấm Dipping Sauce:

    • 1/4 cup fish sauce
    • 3 tablespoons water
    • 2 tablespoons fresh lime juice
    • 2 tablespoons rice vinegar
    • 2 tablespoons sugar
    • 1 garlic clove, minced
    • 1 red chili, finely chopped (optional)

    Prepare the Crab Cakes:

    • In a large mixing bowl, combine the lump crab meat, breadcrumbs, mayonnaise, egg, cilantro, green onions, fish sauce, red chili flakes (if using), grated ginger, and minced garlic.
    • Season with salt and black pepper to taste. Gently fold the mixture until well combined, being careful not to break up the crab meat too much.

    Form the Crab Cakes:

    • Divide the crab mixture into equal portions and shape them into patties. You can make them as big or as small as you prefer.

    Cook the Crab Cakes:

    • Heat vegetable oil in a skillet over medium heat. Once hot, add the crab cakes and cook for 3-4 minutes per side or until golden brown and cooked through.

Prepare the Nước Chấm Dipping Sauce:

    • In a small bowl, whisk together fish sauce, water, fresh lime juice, rice vinegar, sugar, minced garlic, and chopped red chili (if using). Mix until the sugar is dissolved.

    • Arrange the cooked crab cakes on a serving plate. Serve them warm with the prepared Nước Chấm dipping sauce on the side.

    Garnish (optional):

    • Garnish the crab cakes with additional chopped cilantro and green onions for freshness and color.

Enjoy your Nước Chấm Crab Cakes! They make a delightful appetizer or main course, and the dipping sauce adds a wonderful balance of sweet, salty, and tangy flavors.
