Orange -Glazed Polenta Cake Recipe

    For the Cake:

    • 1 cup fine polenta
    • 1 cup almond meal
    • 1 cup all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup plain Greek yogurt
    • Zest of 2 oranges

    For the Orange Glaze:

    • 1/2 cup fresh orange juice
    • 1/2 cup granulated sugar
    • Zest of 1 orange


    Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Prepare the Dry Ingredients:

    In a medium bowl, whisk together the polenta, almond meal, all-purpose flour, baking powder, baking soda, and salt. Set aside.

    Cream the Butter and Sugar:

    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This can be done using an electric mixer.

    Add Eggs and Vanilla:

    Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix well.

    Incorporate Dry Ingredients:

    Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.

    Add Yogurt and Orange Zest:

    Stir in the Greek yogurt and orange zest until the batter is smooth and well mixed.

    Bake the Cake:

    Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

    Make the Orange Glaze:

    While the cake is baking, prepare the orange glaze. In a small saucepan, combine the orange juice, granulated sugar, and orange zest. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture thickens slightly. Remove from heat.

    Glaze the Cake:

    Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Transfer the cake to a wire rack set over a baking sheet. Pour the warm orange glaze over the top of the cake, allowing it to soak in.
