Peanut Butter Cup Cookie Bars Recipe


    For the Cookie Base:

    • 1 cup (2 sticks) unsalted butter, softened
    • 1 cup granulated sugar
    • 1 cup packed light brown sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt

    For the Filling:

    • 1 1/2 cups creamy peanut butter
    • 1 cup powdered sugar
    • 1/2 cup unsalted butter, softened
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon salt
    • 2 cups chopped peanut butter cups (about 16-20 regular-sized cups)

    For the Topping:

    • 1 1/2 cups semi-sweet chocolate chips
    • 1/2 cup creamy peanut butter


    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Grease a 9×13-inch baking pan and set it aside.

    Prepare the Cookie Base

    In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

    Add the eggs one at a time, beating well after each addition.

    Stir in the vanilla extract.

    In a separate bowl, whisk together the flour, baking soda, and salt.

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

    Press about two-thirds of the cookie dough into the bottom of the prepared baking pan, creating an even layer.

    Reserve the remaining dough for later.

    Prepare the Peanut Butter Filling

    In a mixing bowl, beat together the peanut butter, powdered sugar, softened butter, vanilla extract, and salt until smooth.

    Gently fold in the chopped peanut butter cups.

    Spread the peanut butter filling evenly over the cookie base in the baking pan.

    Add the Remaining Cookie Dough

    Crumble the remaining cookie dough over the peanut butter filling, creating a streusel-like topping.


    Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and the center is set.

    Allow the bars to cool completely in the pan on a wire rack.

    Prepare the Chocolate Topping

    In a microwave-safe bowl, melt the chocolate chips and peanut butter together in 30-second intervals, stirring between each interval until smooth.

    Pour the chocolate topping over the cooled bars, spreading it evenly with a spatula.

    Chill and Serve

    Place the pan in the refrigerator for at least 1-2 hours or until the chocolate topping is set.

    Once set, cut the bars into squares or rectangles and serve.
