Picadillo-Stuffed Poblano Peppers Recipe

    Ingredients:

    • 6 large poblano peppers
    • 1 lb ground beef or ground turkey
    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1 cup diced tomatoes (fresh or canned)
    • 1/2 cup raisins
    • 1/2 cup sliced green olives
    • 1/4 cup slivered almonds
    • 1 teaspoon ground cumin
    • 1 teaspoon dried oregano
    • 1/2 teaspoon ground cinnamon
    • Salt and pepper to taste
    • 1 cup cooked rice (white or brown)
    • 1 cup shredded Monterey Jack or Mexican blend cheese
    • Fresh cilantro, chopped, for garnish (optional)
    • Lime wedges for serving

    Instructions:

    Roast and Peel Poblano Peppers:

    Preheat your oven’s broiler.

    Place poblano peppers on a baking sheet.

    Broil the peppers, turning occasionally until the skin is blistered and charred.

    Transfer the peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes.

    Peel the skin off the peppers, cut a slit down one side, and remove the seeds.

    Prepare Filling:

    In a large skillet, cook ground beef or turkey over medium heat until browned.

    Drain excess fat.

    Add chopped onions and garlic, cooking until softened.

    Stir in diced tomatoes, raisins, green olives, slivered almonds, cumin, oregano, cinnamon, salt, and pepper.

    Cook for an additional 5 minutes.

    Add cooked rice to the skillet, mixing well.

    Stuff Poblano Peppers:

    Preheat your oven to 375°F (190°C).

    Fill each poblano pepper with the picadillo mixture and place them in a baking dish.

    Bake:

    Sprinkle shredded cheese over the stuffed peppers.

    Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly, and the peppers are heated through.

    Serve:

    Remove from the oven and let them cool slightly.

    Garnish with chopped cilantro if desired.

    Serve the Picadillo-Stuffed Poblano Peppers with lime wedges on the side.
