Pineapple Pound Cake Recipe

    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 3 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup crushed pineapple, drained
    • 1 teaspoon vanilla extract
    • 1/2 cup sour cream

    For the Glaze:

    • 1 cup powdered sugar
    • 2 tablespoons pineapple juice
    • 1/2 teaspoon vanilla extract


    Preheat your oven to 325°F (160°C). Grease and flour a 10-inch bundt pan.

    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add the eggs one at a time, beating well after each addition.

    In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

    Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

    Fold in the crushed pineapple, vanilla extract, and sour cream until the batter is smooth and well combined.

    Pour the batter into the prepared bundt pan, spreading it evenly.

    Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.

    Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.

    For the glaze, whisk together the powdered sugar, pineapple juice, and vanilla extract until smooth.

    Once the cake is completely cool, drizzle the glaze over the top.
