Pressure Cooker Lamb Roast Recipe

    Ingredients:

    • 1 3-4 pound boneless lamb roast
    • 2 tablespoons olive oil
    • 4 cloves garlic, minced
    • 1 tablespoon dried rosemary
    • 1 tablespoon dried thyme
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 cup beef or vegetable broth
    • 1/2 cup red wine (optional)
    • 4 carrots, peeled and cut into chunks
    • 4 potatoes, peeled and cut into chunks
    • 1 onion, sliced
    • 1 cup green beans, trimmed
    • 1 cup baby potatoes, halved
    • 1 tablespoon cornstarch (optional, for thickening)

    Instructions:

    Prepare the Lamb Roast:

    Pat the lamb roast dry with paper towels.

    In a small bowl, mix together the minced garlic, rosemary, thyme, salt, and black pepper.

    Rub the spice mixture all over the lamb roast, ensuring even coverage.

    Sear the Lamb:

    Select the “Sauté” function on your pressure cooker and heat the olive oil.

    Sear the lamb roast on all sides until browned. This step adds flavor to the meat.

    Add Liquid and Deglaze:

    Pour in the broth and red wine (if using), scraping the bottom of the pressure cooker to release any browned bits.

    Pressure Cook:

    Place the seared lamb roast back into the pressure cooker.

    Add carrots, potatoes, onion, green beans, and baby potatoes around the lamb.

    Close the lid and set the pressure cooker to high pressure for about 60 minutes. Adjust the time based on the size of your lamb roast.

    Natural Release:

    Once the cooking time is complete, allow for a natural release for 10-15 minutes. Then, carefully release any remaining pressure.

    Check Doneness:

    Use a meat thermometer to ensure the lamb has reached your desired doneness (145°F/63°C for medium-rare, 160°F/71°C for medium).

    Thicken the Sauce (Optional):

    If you prefer a thicker sauce, mix cornstarch with a little water to make a slurry. Stir the slurry into the liquid in the pressure cooker and select the “Sauté” function. Cook until the sauce thickens.

    Serve:

    Slice the lamb roast and serve it with the vegetables. Spoon some of the flavorful sauce over the top.
