Quinoa Pizza Bites Recipe

    • 1 cup quinoa, rinsed and drained
    • 2 cups water
    • 1 cup pizza sauce
    • 1 cup shredded mozzarella cheese
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup chopped pepperoni or your favorite pizza toppings (optional)
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • Salt and pepper to taste
    • Cooking spray or olive oil for greasing


    Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or olive oil and set aside.

    In a medium saucepan, bring the water to a boil. Add the quinoa and a pinch of salt, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool for a few minutes.

    In a large mixing bowl, combine the cooked quinoa, pizza sauce, shredded mozzarella cheese, grated Parmesan cheese, chopped pepperoni (if using), dried oregano, dried basil, salt, and pepper. Mix well until all ingredients are evenly distributed.

    Spoon the quinoa mixture into the greased mini muffin tin, filling each cup to the top and pressing down gently to pack the mixture.

    Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the bites are set.

    Remove from the oven and let the quinoa pizza bites cool in the muffin tin for a few minutes before carefully removing them with a fork or knife.

    Serve warm as a delicious appetizer or snack. Enjoy your healthy and flavorful quinoa pizza bites!
