- 1 bunch broccoli rabe, washed and trimmed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices of your favorite bread (sourdough works great)
- 4 ounces sharp cheddar cheese, grated
- 2 ounces fontina cheese, grated
- 2 tablespoons butter, softened
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
In a large bowl, toss the trimmed broccoli rabe with olive oil, salt, and pepper until evenly coated.
Spread the broccoli rabe in a single layer on the prepared baking sheet. Roast in the preheated oven for about 15-20 minutes, or until the broccoli rabe is tender and slightly crispy around the edges. Remove from the oven and set aside.
While the broccoli rabe is roasting, start preparing your grilled cheese sandwiches. Spread a thin layer of softened butter on one side of each slice of bread.
Heat a non-stick skillet or griddle over medium heat. Once hot, place two slices of bread, buttered side down, on the skillet.
Divide the grated cheddar and fontina cheese evenly between the two slices of bread on the skillet.
Top each slice of bread with a generous portion of the roasted broccoli rabe.
Place the remaining slices of bread, buttered side up, on top of the broccoli rabe and cheese to form sandwiches.
Cook the sandwiches for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey.
Once the sandwiches are cooked to your liking, remove them from the skillet and let them cool for a minute or two before slicing and serving.
Serve your roasted broccoli rabe grilled cheese sandwiches hot with your favorite dipping sauce or alongside a fresh salad for a delicious and satisfying meal. Enjoy!
