    • 1 pound (about 450g) ground sausage (pork or turkey)
    • 1 cup diced onion
    • 1 cup diced celery
    • 1 cup diced apple (such as Granny Smith)
    • 1 cup diced mushrooms
    • 2 cloves garlic, minced
    • 1/2 cup unsalted butter
    • 8 cups day-old bread cubes (use a mix of white and whole wheat)
    • 1 teaspoon dried sage
    • 1 teaspoon dried thyme
    • 1/2 teaspoon dried rosemary
    • 1/2 teaspoon dried parsley
    • Salt and pepper to taste
    • 1 1/2 cups chicken or vegetable broth
    • 2 large eggs, beaten
    • Cooking spray


    Preheat the oven to 375°F (190°C). Grease a mini muffin tin with cooking spray and set aside.

    In a large skillet over medium heat, cook the ground sausage until browned and cooked through. Remove any excess grease.
