Sheet-Pan Maple-Glazed Chicken Thighs And Butternut Squash Recipe

    Ingredients:

    • 4 bone-in, skin-on chicken thighs
    • 1 small butternut squash, peeled, seeded, and diced
    • 1 red onion, thinly sliced
    • 2 tablespoons olive oil
    • Salt and black pepper, to taste
    • 1/4 cup maple syrup
    • 2 tablespoons Dijon mustard
    • 2 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon chili powder
    • Fresh parsley, chopped (for garnish)

    Instructions:

    Preheat the Oven:

    Preheat your oven to 425°F (220°C).

    Line a large sheet pan with parchment paper or lightly grease it with cooking spray.

    Prepare the Chicken Thighs:

    Pat the chicken thighs dry with paper towels.

    Season them with salt and black pepper, ensuring both sides are well-coated.

    Place the thighs on one side of the prepared sheet pan.

    Prep the Vegetables:

    In a mixing bowl, toss the diced butternut squash and sliced red onion with olive oil, salt, and pepper.

    Spread the seasoned vegetables on the other side of the sheet pan, leaving space between each piece.

    Maple-Glaze Mixture:

    In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, dried thyme, smoked paprika, and chili powder.

    Brush the chicken thighs with half of the glaze, ensuring an even coating.

    Roast in the Oven:

    Place the sheet pan in the preheated oven and roast for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.

    Remember to brush the remaining glaze onto the chicken halfway through the cooking time.

    Serve and Garnish:

    Once cooked, remove the sheet pan from the oven.

    Allow the chicken to rest for a few minutes.

    Serve the maple-glazed chicken thighs alongside the roasted butternut squash and onions.

    Garnish with fresh chopped parsley for a burst of color and added flavor.
