Southwest Chili Recipe

    Ingredients:

    • 1 lb ground beef or turkey
    • 1 large onion, diced
    • 3 cloves garlic, minced
    • 1 red bell pepper, diced
    • 1 yellow bell pepper, diced
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (15 oz) kidney beans, drained and rinsed
    • 1 can (15 oz) corn kernels, drained
    • 1 can (28 oz) crushed tomatoes
    • 1 can (8 oz) tomato sauce
    • 2 tablespoons tomato paste
    • 2 teaspoons ground cumin
    • 2 teaspoons chili powder
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon cayenne pepper (adjust to taste)
    • Salt and black pepper to taste
    • 2 cups beef or vegetable broth
    • 2 tablespoons olive oil
    • Optional toppings: shredded cheddar cheese, sour cream, sliced green onions, chopped cilantro, lime wedges

    Instructions:

    Brown the Meat:

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it up with a spoon as it cooks.

    Sauté Vegetables:

    Add the diced onion, garlic, and bell peppers to the pot. Cook for 5-7 minutes until the vegetables are softened.

    Spices and Tomato Paste:

    Stir in the cumin, chili powder, smoked paprika, cayenne pepper, salt, and black pepper. Add the tomato paste and cook for 2 minutes to enhance the flavors.

    Combine Ingredients:

    Pour in the crushed tomatoes, tomato sauce, black beans, kidney beans, corn, and beef or vegetable broth. Stir well to combine all the ingredients.

    Simmer:

    Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for at least 30 minutes to allow the flavors to meld together. You can simmer it longer for even more depth of flavor.

    Adjust Seasoning:

    Taste the chili and adjust the seasoning as needed. Add more salt, pepper, or spices according to your preference.

    Serve:

    Ladle the Southwest Chili into bowls and garnish with your favorite toppings, such as shredded cheddar cheese, sour cream, green onions, cilantro, and lime wedges.
