Strawberry Cream Scones Recipe


    • 2 cups all-purpose flour
    • 1/3 cup granulated sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, cold and cut into small pieces
    • 1 cup fresh strawberries, hulled and diced
    • 1/2 cup heavy cream
    • 1 teaspoon vanilla extract
    • 1 large egg

    For Glaze:

    • 1 cup powdered sugar
    • 2 tablespoons milk
    • 1/2 teaspoon vanilla extract


    Preheat the Oven:

    Preheat your oven to 400°F (200°C).

    Line a baking sheet with parchment paper.

    Prepare the Dry Ingredients:

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

    Incorporate Butter:

    Add the cold, diced butter to the dry ingredients.

    Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

    Add Strawberries:

    Gently fold in the diced strawberries into the flour-butter mixture.

    Mix Wet Ingredients:

    In a separate bowl, whisk together the heavy cream, vanilla extract, and egg.

    Combine Wet and Dry Mixtures:

    Pour the wet ingredients over the dry ingredients and stir until just combined.

    Be careful not to overmix; the dough should be slightly crumbly.

    Form the Dough:

    Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick circle.

    Cut into Scones:

    Using a round biscuit cutter, cut out scones from the dough and place them on the prepared baking sheet, leaving space between each.


    Bake in the preheated oven for 15-18 minutes or until the scones are golden brown and cooked through.

    Prepare Glaze:

    While the scones are baking, mix the powdered sugar, milk, and vanilla extract to prepare the glaze.

    Glaze the Scones:

    Once the scones have cooled slightly, drizzle the glaze over the top of each scone using a spoon or piping bag.

    Serve and Enjoy:

    Allow the glaze to set for a few minutes, then serve the strawberry cream scones warm with a cup of tea or coffee. Enjoy!
