Stuffed Portobello Mushrooms recipe

    • 4 large Portobello mushrooms, stems removed and cleaned
    • 2 tablespoons olive oil
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 cup baby spinach, chopped
    • 1/2 cup breadcrumbs
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup sun-dried tomatoes, chopped
    • 1/4 cup fresh basil, chopped
    • Salt and black pepper to taste
    • 1/2 cup shredded mozzarella cheese (optional, for topping)
    • Fresh parsley for garnish

    Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C).

Step 2: Prepare the Portobello Mushrooms

Clean the Portobello mushrooms with a damp cloth to remove any dirt.

Gently remove the stems from the mushrooms, creating a hollow space for the stuffing.

Brush the mushroom caps with olive oil on both sides and place them on a baking sheet.

    Step 3: Prepare the Filling

In a skillet over medium heat, add 2 tablespoons of olive oil.

Add chopped onions and garlic, sautéing until softened and fragrant.

Add the chopped spinach to the skillet and cook until wilted.

In a bowl, combine the sautéed mixture with breadcrumbs, Parmesan cheese, sun-dried tomatoes, and fresh basil.

Season the filling with salt and black pepper to taste.

    Step 4: Stuff the Mushrooms

Spoon the filling into the hollowed-out Portobello mushrooms, pressing down gently to pack it.

Optionally, top each stuffed mushroom with a sprinkle of shredded mozzarella cheese.

    Step 5: Bake

Bake in the preheated oven for about 20-25 minutes or until the mushrooms are tender and the filling is golden brown.

If you added mozzarella cheese, let it melt and become bubbly.

    Step 6: Garnish and Serve

Remove the stuffed Portobello mushrooms from the oven.

Garnish with fresh parsley for a burst of color and freshness.

Serve the stuffed mushrooms warm as an appetizer or alongside a salad for a light main course.

These Stuffed Portobello Mushrooms are a flavorful and satisfying dish that combines the earthy taste of mushrooms with a delicious, herb-infused stuffing.

Enjoy the savory goodness of this dish as a versatile addition to your meals.
