Sweet Potato Pie Recipe


    For the crust:

    • 1 1/4 cups all-purpose flour
    • 1/2 cup unsalted butter, chilled and cut into small pieces
    • 1/4 cup granulated sugar
    • 1/4 teaspoon salt
    • 3-4 tablespoons ice water

    For the filling:

    • 2 cups mashed sweet potatoes (about 2 large sweet potatoes, baked and peeled)
    • 1/2 cup unsalted butter, melted
    • 1 cup granulated sugar
    • 1/2 cup brown sugar, packed
    • 3 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon salt
    • 1 cup evaporated milk


    Prepare the Crust:

    In a food processor, combine flour, sugar, and salt.

    Add the chilled butter pieces and pulse until the mixture resembles coarse crumbs.

    Slowly add ice water, one tablespoon at a time, and pulse until the dough comes together.

    Turn the dough out onto a floured surface, knead it a few times, and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

    Preheat your oven to 375°F (190°C).

    Roll out the Crust:

    On a floured surface, roll out the chilled dough to fit a 9-inch pie dish.

    Transfer the rolled-out dough to the pie dish, trim the excess, and crimp the edges. Prick the bottom with a fork.

    Pre-bake the Crust:

    Line the crust with parchment paper and fill it with pie weights or dried beans.

    Bake in the preheated oven for about 15 minutes. Remove the weights and parchment paper, then bake for an additional 5 minutes until lightly golden. Set aside.

    Prepare the Filling:

    In a large bowl, combine mashed sweet potatoes, melted butter, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.

    Gradually add the evaporated milk, mixing until well combined.

    Assemble and Bake:

    Pour the sweet potato filling into the pre-baked pie crust.

    Bake in the preheated oven for 50-60 minutes or until the center is set. You can cover the edges with foil if they begin to brown too quickly.

    Allow the pie to cool completely on a wire rack before serving.


    Once cooled, slice and serve the sweet potato pie. Optionally, top with whipped cream or a scoop of vanilla ice cream.
