Turkey And Butternut Squash Chili Recipe

    • 1 lb ground turkey
    • 1 medium-sized butternut squash, peeled, seeded, and diced
    • 1 large onion, finely chopped
    • 3 cloves garlic, minced
    • 1 bell pepper, diced (any color)
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (15 oz) kidney beans, drained and rinsed
    • 1 can (15 oz) diced tomatoes, undrained
    • 1 can (6 oz) tomato paste
    • 2 cups chicken or turkey broth
    • 1 tablespoon chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon cayenne pepper (adjust to taste)
    • Salt and black pepper to taste
    • 2 tablespoons olive oil
    • Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, chopped cilantro


    Prepare the Ingredients:

    • Peel, seed, and dice the butternut squash.
    • Finely chop the onion.
    • Mince the garlic.
    • Dice the bell pepper.
    • Drain and rinse the black beans and kidney beans.

    Cook the Ground Turkey:

    • In a large pot or Dutch oven, heat the olive oil over medium heat.
    • Add the ground turkey and cook until browned, breaking it apart with a spoon as it cooks.

    Saute Aromatics:

    • Add the chopped onion and minced garlic to the pot with the turkey. Cook until the onion is translucent and fragrant.

    Add Vegetables:

    • Stir in the diced butternut squash and bell pepper. Cook for a few minutes until the vegetables start to soften.

    Season the Chili:

    • Add chili powder, ground cumin, paprika, dried oregano, cayenne pepper, salt, and black pepper to the pot. Stir well to coat the ingredients with the spices.

    Combine with Tomatoes and Beans:

    • Pour in the diced tomatoes, tomato paste, black beans, kidney beans, and chicken or turkey broth. Stir to combine all the ingredients.


    • Bring the chili to a boil, then reduce the heat to low. Cover the pot and simmer for about 25-30 minutes, or until the butternut squash is tender.

    Adjust Seasoning:

    • Taste the chili and adjust the seasoning if needed. Add more salt, pepper, or cayenne pepper according to your preferences.


    • Ladle the chili into bowls and garnish with your favorite toppings, such as shredded cheddar cheese, sour cream, chopped green onions, or cilantro.


    • Serve the Turkey and Butternut Squash Chili hot and enjoy a comforting and hearty meal!
